CULINARY VIETNAM

Chef and author Daniel Hoyer has been traveling in Vietnam and he has fallen in love with the country, the people and especially the food.
We travelled together throughout Vietnam taking photographs for his newest cookbook, Culinary Vietnam. From North to South, the images start at Bac Ha market near the Chinese border, then move down through Sapa, Hanoi, Hue, Hoi An, Nha Trang, Saigon (Ho Chi Minh City) and finally Can Tho in The Mekong Delta. The book is due for release early 2009.

Star Chef at Culinary Event on June 7 & 8 Celebrating Fully Renovated Ike’s Bistro

Michelin Star winning chef Yoji Tokuyoshi and Ever de Pena prepare unique 5-course Tasting Menu
EAGLE BEACH, June 4, 2014 – On Saturday June 7 and Sunday June 8 a unique culinary event will be held at all-new Ike’s Bistro, the open-air restaurant of Manchebo Beach Resort & Spa in Eagle Beach. Here Japanese-born celebrity chef Yoji Tokuyoshi of Michelin-star restaurant Osteria Francescana in Modena, Italy along with Ike’s Bistro Chef Ever de Pena will prepare a special 5-course tasting menu.
Tokuyoshi briefly worked at the worlds’ most famous restaurant, El Bulli and holds eight years at Michelin Star Osteria Francescana, rated # 3 on The Worlds 50 Best Restaurants. Tokuyoshi met Ever de Pena last year at the Mistura Festival in Lima, one of the largest food events for culinary influencers in the world.
Venezuela-born De Pena grew up in Aruba, studied at EPI and finalized his AI-program in 2010. A chef at Manchebo since 2011, he was responsible for the transformation of former Italian restaurant Giorgio’s into Ike’s Bistro, which opened in November 2012.
To mark the completion of Ike’s Bistro US$350,000 re-do and this weeks inauguration of its brand new bar and lounge area, De Pena came up with the idea to fly in celebrity chef Tokuyoshi and create a festive, culinary 2-day event. Tokuyoshi practices the Contemporary Cuisine, adding techniques and cultural influences of his own Japanese background to each meal, even if that is a traditional Italian dish. “At the Ike’s Bistro tasting event for instance, I will prepare a traditional Risotto Parmesano, served with 3 different sauces and presented in my own, creative way”, says Tokuyoshi.
De Pena is excited about Tokuyoshi’s approach and wants to learn from his expertise and Contemporary Cuisine influences, as his style is based on fusion cooking, blending a variety of (international) flavors and tastes. “Bringing Yoji to Aruba is an exciting experience for our customers, yet also an inspiration for me and our future menus. I can’t wait for this weekend and our unique collaboration to start”, De Pena states.
The 5-course tasting menu, including a wine pairing is available at US$90 per person with a choice of 3 seatings each night, at 6:30, 7:30 and 8:30 pm. Both chefs will make an appearance in the restaurant at a live-cooking station where guests can have a closer look at their culinary magic. The re-do of Ike’s Bistro is part of Manchebo’s 3-year, US$ 3 million renovation project that completed this week, with the addition of the new lounge and bar at Ike’s. “Our vision for Ike’s Bistro is to make this restaurant a culinary hotspot in the Caribbean – says Edgar Roelofs, the Resort’s general manager. “Bringing a Michelin-star chef to Aruba, inspiring our own chef Ever de Pena to bring his cooking to a higher level is a step in that direction, along with our brand new look and feel”.
Responsible for the interior design and overseeing the entire renovation process at Manchebo Beach Resort & Spa is US-based interior designer Rachel Bowden of DesignYogi. “Our goal was to create a timeless, elegant, yet completely casual environment that would showcase the natural beauty of Aruba, its turquoise ocean and clear blue sky. We relied on nature for our earth-toned color palette, and used sustainably grown and harvested materials wherever possible”, Rachel explains.
The new Ike’s Bistro Lounge features reclaimed wood, sea grass, rattan and bent bamboo furnishings in mellow browns, tans and ivory. Thick hand woven sisal rugs complement each sitting area creating the perfect island vibe. “The rugs are my absolute favorites,” says Rachel. “They really make you want to kick off your flip flops and settle in to read, or enjoy the view while sipping on a refreshing cocktail.”
The center of the new Ike’s bar area features 3 custom hanging driftwood light fixtures. “We went searching for the most interesting pieces of driftwood we could find on the island, brought them to the resort, wrapped them with lighted copper wire, and suspended them over the bar,” Rachel elaborates. “To me, attention to detail and these one-of-a-kind touches reflect the heart and soul of the resort.”
Ike’s Bistro is open daily from 7am-11.30am for breakfast and from 5.30pm – 10.30 pm for dinner. Ike’s Bistro has a total capacity of 88 seats. For more information, visit manchebo.com or facebook.com/manchebobeach.

Across the deep blue sea in Saint-Étienne, a Des Moines sister city in southeastern France, two young chefs saw all their hard work rewarded.
Alexis Robin and Caroline Girol were, respectively, the winner and runner-up of the L’association des Cuisiniers de la Loire’s “trophée.” Their grand prix? A trip to Des Moines, Ia. Mais oui!
For the 12th year, the professional association of chefs from the area around Saint-Etienne in the Loire “department” of France (not to be confused with the Loire River valley area) awarded the prize.
The two up-and-comers, along with their chef-chaperone Gilbert Grandsire, will arrive Nov. 14 and spend two weeks working with the Embassy Club and Michael and Lisa LaValle. Their time here will culminate in a multicourse dinner on Nov. 24 at the downtown Embassy Club. The menu will feature the chefs’ winning dishes.
The club’s general manager, Michael LaValle, says the program is unique in the country. “We’ve been flying under the radar with this — it started before all the ‘celebrity chef’ stuff and now it’s pretty well established.”
Maura Nelson, a professor of French at Des Moines Area Community College and coordinator for the school’s longtime French chef exchange program, says Des Moines’ connection to chefs from St. Étienne started in 1986, shortly after the French town was designated a sister city.
“The sister city people called DMACC and asked if they were interested in having a chef come over and cook. They said sure,” Nelson says. As the school’s only French teacher, she was tapped as a translator. “Then, we thought the idea was so great, we decided to continue it.”
The Embassy Club and DMACC’s French chef exchange program both chip in to get the chefs here.
“It’s an inspiring thing to see these young people go on in their careers; they’re moving the culinary football forward in France. Most of them are now cooking in starred restaurants,” LaValle says. “It’s a back-and-forth giving thing and we get to bring a little of that sister city culture here. They were raised in that (food-centric) culture.
“These kids have, besides amazing technical skills, a really developed palate. They don’t have that Skittles palate so common here, where every flavor has to be exaggerated. They’ve got more talent in their pinkies than half the chefs on television.

Showcasing Rent a Chef’s Bas amazing skills A culinary tour de force at De Suikertuin Restaurant

page-02The Food and Wine pairing with Pepia Est’s Raymond Kok and Rent a Chef’s Bas Kuurstra at historic mansion De Suikertuin Restaurant in the Wilhelminastraat has been a truly amazing culinary event. Each of the small plates was delicious, beautifully presented and filled with surprising flavors; the wines that accompanied the six courses flawlessly complimented as well as enhanced the six tasty courses.
Held last Friday, September 5, De Suikertuin’s guests were treated to a `calling card’ of Chef Bas, whose newly established company has already been getting rave reviews. The menu started off with a rustic puff pastry pizza with fresh tomato sauce, mozzarella and basil leaves  accompanied by a glass of Mezzacorona Pinot Grigio from the Dolomite mountains in Italy. The fresh, yet rich Pinot Grigio received top marks from the guests, who loved the wide variety of notes on the palate. Ferngreen’s Sauvignon Blanc was the choice for the jumbo shrimp in a lemon-garlic sauce on a baby arugula salad with cherry tomatoes; its soft bouquet with its citrusy and tangy acidity perfectly paired with the shrimp.
On with a softly sweet Riesling by Dr. Loosen, the surprisingly wonderful partner for a delicious lobster spring roll with a lightly spicy chili-cilantro sauce. This Riesling from the Mosel Valley is a gem, elegant and fresh; the combination with the Indonesian-style spring roll could not have been better.  Then the more robust red wines took the spotlight, the first a Pinot Noir from Red Tree, which mixed its cherry, cranberry and spice notes to a fluffily baked gemelli pasta with three cheeses, lump crab, baby spinach and crisp pancetta.
A Red Diamond Malbec was the carefully chosen companion for the roasted Angus beef strip loin, truffle sauce and garlic roast potatoes. The sweet finale consisted of dark chocolate lava cake, chocolate mud and a red fruit compote with a vanilla and cinnamon twist with a glass of Lost Angel Cabernet Sauvignon: a bold, yet intriguing pairing that took everyone’s breath away.
The superb evening at De Suikertuin was enjoyed by enthusiastic guests, who were unanimous in their praise. The following event will be an Indonesian Rijsttafel, cooked by Anton and Isabella at the end of this month.
The dinner series at De Suikertuin has been very well received and people are already looking forward to the next event. Last Friday’s Food & Wine Pairing with Chef Bas and Pepia Est was an absolute highlight. Kudos!
